The Squash that Never Grew Up

Diana Beebe's Blog, Diana Beebe, science fiction, middle grade fantasy, fantasyLast year, we didn’t plant any squash plants in our vegetable garden. The mean ol’ squash bug infestation of 2012 meant no zucchini, butternut, yellow squashes in 2013. None. What’s a veggie garden without squash?

No fun, I tell ya.

This year, to make up for the holes in the garden, we’re making up for it by staying young. Never gonna grow up.

It’s a “Peter Pan” squash! The best name ever!

I have absolutely no idea why it’s called that, but it’s cute.

Diana Beebe's Blog, Diana Beebe, science fiction, middle grade fantasy, fantasyEvidently there is no wrong way to cut up one of the these, so I cut off all the yellow peel. Then I cut out the seeds, diced the rest, and put it in a glass casserole dish.

The recipe I used called for:

  • A little olive oil
  • A couple of tablespoons of honey
  • A tiny bit of grated ginger
  • A pinch of salt

I popped the dish in the oven to roast until caramelized. That was the plan, I took it out too soon to truly caramelize, but it was still delicious!

As you can see, I’ve been busy with things other than blogging: editing, planning summer activities, dealing with work deadlines (gotta pay the bills), and gardening.
